Mistletoe Bough is, in my humble opinion, one of the top B&Bs in Alabama. I'm Jennifer, the Innkeeper, and I enjoy cooking and baking and I especially enjoy sharing old family recipes with my guests. Today I'm going to share a cake that's beloved by many in my family, Fruit Cocktail Cake.

Every stay at Mistletoe Bough includes something sweet baked right in my kitchen. What better way can we help to foster a romantic Alabama getaway than by providing a little bit of sweet goodness?
The Recipe
Let's go step by step on how this cake is created. Here's what you'll need:
2 c flour
1 1/2 c sugar
2 tsp soda
dash of salt
Mix together and add 2 beaten eggs and 1 can of fruit cocktail (with the juice)
Bake in a 9x13 pan at 350 degrees for 25-30 mins.
Also, this cake has cooked icing and here's what you'll need for that!
3/4 c sugar
1 stick butter
1 tsp vanilla
1 small can of condensed milk (2/3 c)
Boil over medium heat for 7 minutes and add 1 c pecans and 1 c coconut
Pour over cooled cake
Step 1:
Mix your flour, sugar, soda, salt, together. Toss in a can of fruitcocktail and then beat. your eggs in the fruitcocktail can (because that's how my momma taught me to do it), it saves a dirty dish. Mix altogether.

It should look very similar to this.

Step 2: Grease a 9x13 pan and pour cake batter in to it. Bake for about 30 minutes at 350 degrees. Side note, I love using these Nordicware aluminum pans. They clean easily, and bake evenly and come with a lid. I've linked them here for you on Amazon.

Step 3:
Empty the dishwasher, reload it, and pull out ingredients while this cake bakes. That's about all you'll have time for since this cake bakes so quickly. Here's what it should look like right out of the oven. While it's cooling, make the icing.

Step 4:
Make the Icing.
You'll need:
3/4 c sugar
2/3 condensed milk (5 oz can)
1 stick butter
1 tsp vanilla
Bring to a boil and boil over heat for 7 minutes. Add 1 c pecans and 1 c coconut, then pour over cooled cake.

Step 5:
Pour over your cake and enjoy! (I didn't put pecans on this cake because I like it both ways, and I wasn't feeling the pecans this time around. Make it however you like!)

This cake has been in my memory my entire life. It's been requested for birthdays, holidays, and everydays by many people in my family. It was my Grandpa's favorite, too. I have to admit, it's in my top 5 all time cakes for sure.
